Anweisungen:

  1. Rinse the quinoa under cold water in a fine mesh sieve. Place it in a saucepan with 300ml of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes until the water is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for an additional 5 minutes.
  2. While the quinoa is cooking, steam the finely chopped cauliflower for about 10 minutes, or until tender. You can do this in a steamer basket or in a microwave with a little water in a covered bowl, then drain any excess water.
  3. In a mixing bowl, combine the cooked quinoa, steamed cauliflower, crumbled tofu, almond butter, and olive oil if using. If your toddler is over 12 months, you can add a small pinch of salt for flavor. Mix well until all the ingredients are combined.
  4. Preheat your oven to 180°C (356°F). Line a baking tray with parchment paper.
  5. With your hands, take small amounts of the mixture and form bite-sized balls or patties. Place them on the lined baking tray, leaving a little space between each.
  6. Bake in the preheated oven for about 25-30 minutes, turning halfway through, until golden and slightly crispy on the outside.
  7. Allow the bites to cool down slightly before serving to your toddler.
